Easy Egg Baskets

I made these English Muffin Egg Baskets this morning and they were SUPER easy, and REALLY yummy!!!  My kids devoured them!!!  Even The Princess who HATES bread!!

Ingredients You'll need:
English muffins of any flavor (our regular bread works too)
eggs
bacon
butter flavor cooking spray
butter

Tools You'll Need:
2 rimmed cookie sheets
aluminum foil
circle cookie or biscuit cutter

Directions:
Preheat oven to 350 degrees
Line one cookie sheet with foil
Cut bacon into small pieces and lay in a single layer on foil lined cookie sheet
Using cookie cutter, cut centers from english muffin or bread.
butter the cut pieces of english muffin or bread
Spray second cookie sheet with butter flavor cooking spray
place english muffin or bread pieces on sprayed cookie sheet
place both cookie sheets in preheated oven
after about 1-2 minutes remove cookie sheet containing muffins/bread
Crack one egg into the center of each muffin/bread piece
return cookie sheet with eggs to oven
cook until whites of egg are no longer clear, but remain shiny about 5 minutes (over-easy eggs)
watch bacon for desired doneness (5 minutes will make for crispy bacon)
remove bacon and egg baskets from oven
Place bacon on a paper towel to remove grease
Use toasted muffin/bread centers for dipping
EAT and ENJOY!

Scrumpdiddlyumptious Desserts



I am a master baker wannabe and because of my wannabe status I have a tendancy to collect dessert recipies from magazines, blogs, cookbooks and many other sources.  Over the last couple of years my stash of recipes has grown to astounding porportions. 

As I stated in my New Years Resolution post I want to start baking from scratch more often, so to help achieve that goal I have started another blog to chronicle my baking endeavors.  I hope you join me on my journey of baking fun, enjoyment and I'm sure a few disasters along the way.

Oven Fried Chicken


This is a recipe I got off the back of a Bisquick box many years ago. It is great for picnics and taste excellent served cold (which is how I prefer it!) I've made this dish 100's of times and truth be told I rarly make it the same way twice.....it's that flexable!!

Here is the original recipe:
1Tblsp butter
2/3C original Bisquick Mix
2tsp paprika
1tsp salt
1tsp pepper
About 3lbs skin on chicken pieces thighs or legs are best)
Heat oven to 425. Melt butter in 13x9 baking dish. In a ziplock bag mix together Bisquick, paprika, salt & pepper. Drop chicken pieces into bag one at a time and coat completly with bisquick mixture. Remove dish from oven and coat entire bottom of dish with melted butter. Place chicken pieces skin-side down in dish. Bake for 35 minutes. Turn chicken over. Bake an additional 15 minutes.

Now alternative ways I've made it.
Double paprika for extra spice.
Add 1-2tsp of garlic powder.
Use Kosher salt instead of table salt.
Add 1tsp ground rosemary or other seasoning.
Add a Mrs.Dash seasoning for Chicken.

Like I said I prefer this recipe cold, but my kids and The King love it hot or cold.

Ham ~N~ Cheese Pasta


This is one of our families go to favorites during a busy week. It's so easy to make and taste great too.

What you'll need:
8oz uncooked small pasta shells
1 pound velveeta cheese, cubed
1/2c milk
2tbsp ketchup
1tbsp prepared horseradish
2 cups cooked ham, cubed


Cook pasta, drain, rinse in cold water. In a microwave safe dish, combine cheese and milk. Microwave on high for 2 minutes, stir, heat 1-2 minutes longer until smooth. Stir in ketchup and horseradish until blended. Place pasta in large bowl, stir in ham and cheese mixture. Pour pasta mixture into a greases baking dish. Cover and bake at 350* for 30-35 minutes.
