One Year Ago Today...........

One year ago today I woke up in London for the first time.  My traveling companions and I had another day of adventures planned.  After getting ready for our day, we made our way to the Victoria Coach Station where we would await boarding of our scheduled tour bus.

The first stop on our tour was Windsor Castle.  This is one of the active homes of Queen Elizabeth and the State Rooms are open to the public July and August.  As a history geek, I absolutely loved walking these halls and grounds.

There is so much detail in every aspect of the castle.

And of course we saw a Guard on duty.

The next stop on our tour was the town of Bath.  This was such a beautiful picturesque town, my only regret was our time here was very limited.  I really could have spent all day there, even in the pouring rain we were experiencing.

After our quick excursion in Bath we drove through the beautiful English countryside on our way to the medieval village of Lacock.

This is a quant little village that seems untouched by modernity.  It is also the "go to" filming location for period films and shows.

In the village is a very old church with a church yard full of gravesites.
These gravestones are so old they are illegible.

We were catered to a wonderful lunch at The George Inn in the center of town.

Me and my beautiful sisters.
After our visit in Lacock we made our way to Stonehenge.

What can I say about Stonehenge, other than "Oh My God!"  Pictures do not do this structure justice!  These stones are so large and so strategically placed that their mere presence in this location is mind boggling!

This tour included an audio guide that discussed the history of the stones, their origins, their meanings, and their development over time.

My poor niece felt she was being tortured by some boring history lesson, while the rest of us were simply fascinated!
Our day concluded with dinner and people watching at the Victoria Train Station.

This is such a busy place it fascinated all of us.

Overall, we had a great second day of our dream come true trip.

One Year Ago Today.......

It was one year ago today that I stepped foot on British soil for the first time in my life!  It had been a life long dream to go to Great Britain and my excitement was truly palpable.

I was traveling with my two sisters, my sister-in-law and my 18 year old niece.  The trip was a graduation gift for my niece.

We landed at London's Heathrow Airport at 7am (3am California time!). Our flight had been uneventful and luckily we had all been able to sleep because we had a busy day ahead of us.

We had all decided prior to our arrival that we would make our way to our rented apartment via the London Underground.  We all felt this was the best way to get ourselves oriented with the Tube since it would be our primary mode of transportation while in London.

Our first ride on the Tube was memorable for many reasons!  But I have to say my favorite was watching a young couple in an argument on the train.  You may be wondering "Why on earth would an argument be her favorite memory?"  And the answer is quite simple......it was literally the funniest thing ever!

So we arrive at a stop and the doors open, a young man mid-twenties, enters the train and tosses a large package containing a child's push toy into the corner.  Just behind him a young woman, also mid-twenties, enters the train behind him pushing a young baby in a stroller.  She stands to the opposite side of the train from the young man.  We are sitting next to the young man and to the right of the young woman.  At first we didn't know the two were even together, until after about 10 minutes on the train the young woman turns to the young man and say's in a very load voice with a very heavy British accent, "Fuck you, Charlie!  Just fuck you!"  The young man, Charlie, gave no acknowledgement of this comment.  My travelling companions and I on the other hand had to carefully replace our bulging eyes and pretend as if we had heard nothing.

Few minutes later, the young woman once again turns her attention to Charlie.  "I have to make dinner and wrap gifts, but fine Charlie, fuck you!"  Again said in a load heavily accented British voice.  Charlie once again gave no acknowledgement of this statement.  At this point my traveling companions and I have deduced that this young woman is clearly not happy with Charlie for making her make dinner and wrap gifts.

After another few minutes, Charlie rises from his seat and walks over to the baby in the stroller, who is about a year old, and moves the stroller over next to the seat where he was sitting.  Never acknowledging the young woman, who up until this time has been completely ignoring the babbling baby.  In response to this move by Charlie, the young woman proceeds to Charlies seat and retrieves the stroller and returns it to her side, however this time faces the child away from Charlie.  Upon this display of clear annoyance by the young woman in response to Charlies action, my traveling companions and I are beginning to find it hard not to laugh out right.

After a few minutes, Charlie rises again and this time removes the child from the stroller and returns to his seat with the child on his lap.  Again never acknowledging the young woman.  At this point my companions and I are eagerly anticipating the young woman's next move.  After a few minutes we see her ruffle through the diaper bag hanging from the stroller and retrieves a bottle.  With bottle in hand she moves towards Charlie's seat.  The baby upon seeing the bottle immediately reaches for the bottle.  As the young woman goes to remove the baby from Charlie's arms, Charlie snags the bottle from her hand and hands it to the baby.  The young woman, clearly annoyed by her attempt to snag the child being spoiled by Charlie's quick action, returns to her spot on the opposite side of the train.  "Fuck you, Charlie!" we hear once again, although quieter this time.

After a few more minutes, and a couple more stops, Charlie, baby in arms, package in hand exits the train followed by an annoyed young woman.  Upon their exit my niece leans over to me and says in a British accent, "I wonder if Charlie bit her finger?"  I nearly peed myself laughing!! If you have no idea why this comment is funny, go here and you'll understand!!

After our encounter with Charlie, we made our way to check in at our rented apartment.  After checking in we made our way to a local pub, name of which I can't recall, and my niece had her first legal beer ever!

After the pub, we made our way to our apartment and settled in for a few hours before making our way to the area of  Whitechapel for an evening Jack The Ripper walking tour.  This tour was by far the best walking tour I've been on!  Our tour guide, Lindsey Siviter, was incredible and really knew her Jack the Ripper stuff!  Anyone heading to London who has an interest in learning more about the story of Jack the Ripper, I highly recommend this tour group, and maybe you'll get lucky and have our same tour guide!

As Day One of our trip came to a close, we looked forward to the other adventures we would have as our trip continued...........

Chickens, Chickens, Chickens!!!

I love farm fresh eggs and for several years know I have wanted backyard chickens to supply our own eggs.  And for years My Hubby has adamantly said "NO!"  His reasoning being our Pooch is a bird dog and would kill them!  My argument was always that our yard was big enough to keep Pooch and birds separated.  Still, he said "NO!"

Last week, the tides turned! The Contessa made a deal with My Hubby.  The deal was if she got a good grade on her math test (she has a terrible time in math!) that she could get two baby chicks from her friend.  My Hubby AGREED!!!  The Contessa received a 98% on her math test and two days later her friend delivered to adorable baby chicks!

Meet Bambi and Dixie!

The next day we headed to our local feed store to pick up some additional supplies we need and to my delight they STILL had more baby chicks in the store!  I knew My Hubby might not be totally pleased with my decision, but I decided to get FOUR MORE CHICKS!!

Meet Delilah, Buttercup, Petunia and Oreo!

As I expected My Hubby was not too pleased with my decision, but once I pointed out the fact that I did NOT bring home a DOG as he had done just a year ago, he calmed down and is now in the planning stages of building our new pets a magnificent coop!

Our chicks are only two weeks old and are currently living in a bin in our garage bathroom until the completion of their permanent home, which they will move into in 5 weeks when they no longer need to be kept warm by the heat lamp.

They are growing at a rapid pace and it is so fun to see how involved all four of my kids are being in taking care of them.

Pinteresting -- Whats on my Pinterest Boards

I have a confession......................I LOVE Pinterest!!  I'm sure I'm not alone in that confession!

I have another confession..............I pin daily, multiple times a day, but never seem to go back and look at what I've pinned!!

So, I'm starting a new feature on my blog titled "Pinteresting" where I actually go back and look at my pins and choose one pin at a time to review, try, or just share with my readers.  I don't have a real set day that I'll be doing this, I'll just be doing it! Hahaha

I have 70 Boards on Pinterest with over 6,700 pins!!  My boards range from recipies, to interesting finds, to places I've been, to household decor and more.

Today, let's take a look at my "Beauty Tips" Board

Specifically, let's take a look at this pin originally fron Beauty Bets.  This is Henna Lipstick.  It's a color changing lipstick that brings out the natural color of your lips.

As someone who doesn't like flashy lipsticks, I was intrigued by the ability to bring out the natural color of my lips without being flashy.  I did a little searching and was able to find this lipstick at Sephora.com.  The one I purchased is by Givenchy and you can find it here

Overall, I am in love and would highly recommend this product!

When Reality Rears It's Head

For most of my adult life my weight and loosing weight has been an ongoing battle for me.  For the last thirteen years I have lost and regained the same 15 pounds more times than I can truly count!  Going to the doctor and being asked to step on the scale has never been an enjoyable experience. Nor has the lectures from my doctor about the importance of loosing weight.

I'm not an inactive person by any means! Up until 4 months ago I took a Boot Camp class five mornings a week and loved it.  However my pocketbook did not!  I have a treadmill which I use daily and I do various weight training and cardio exercises during the week.  I find inspiration on Pintrest and incorporate workouts I find online there weekly as well.

Unfortunately none of this prevented me from being hospitalized for 5 days in February with acute pancreatitis!  Pancreatitis is an inflammation of the pancreas.  According to WebMD 80% of cases are due to alcohol abuse and 20% of cases are due to gallstones.  I am not, nor have I ever been a heavy drinker and test showed I had no gallstones.  So this left my doctors baffled.......why was I experiencing acute pancreatitis?

Further research of my prior medical records revealed the cause in my case to be genetic.  For what ever reason my triglyceride levels run abnormally high, which left untreated can lead to pancreatitis.

So my new reality is a non-fat/low-fat diet from now on and daily medication and monthly blood work to treat and monitor my triglyceride level.  My doctor strongly advised against eating anything containing more than 5grams of fat per serving.

I can not eat regular cheeses, commercially baked goods, processed meats, ground beef, regular pasta, regular ice cream, or any item with added sugar or hydrogenated oils.

I can eat whole wheat pasta, ground turkey, non-fat dairy items and any items that do not contain hydrogenated oils.

So far I've had an easy time of making meals.  Most of the items on my CAN NOT have list I didn't really eat anyway so they are not great loss.  I've had to get more creative with my cooking and going back to a cooking from scratch mentality.  With four kids and a very busy schedule I fell into the convenience trap.

Since my release from the hospital I have lost just over 10 pounds which I'm very proud of.  With my continued exercise routines my hope is to loose those pesky 15 recurring pounds plus more and actually keep it off with my new eating style.

So readers, tell me....have you had experience with pancreatitis?  Do you have any tips for coping to share?
Do you cook from scratch?  Share some recipes if you do!  I'm building my new recipe box!
